Serves: 4 servings
Ingredients
1 whole tilapia fish, cleaned and cut into serving pieces
1 ½ cups cold water
¼ cup distilled white vinegar
1 large bell pepper, cut into squares
½ medium onion, halved and quartered
3 cloves of garlic, sliced or crushed
Thumb-size ginger, peeled and sliced thinly
1 tsp salt
¼ tsp ground black pepper
Instructions
On the bottom of a pot or skillet, arrange bell peppers, onions, garlic, and ginger in one even layer.
Add fish slices next, placing them in a single layer as well.
Add water and vinegar.
Season with salt and pepper.
Cover and bring to a boil. Once it starts boiling, turn down heat to medium low and simmer fish until most of the water has evaporated around 12-15 minutes. While fish is cooking, scoop some of the liquid and pour into fish. Do it a couple of times, and then put the lid back on to finish cooking.
Serve warm with boiled rice.
