Italian Sausage Fried Rice

  • 4 links Italian style chicken sausage, diced
  • 1 cup carrots, diced
  • 1 cup water
  • 1 cup frozen green peas
  • ¼ cup vegetable oil
  • 4 cups white rice (day old)
  • ¼ cup green onions, chopped
  • 2 large eggs
  • 2 tbsp soy sauce
  • ½ tsp salt
  • ⅛ tsp ground black pepper
  • 2 cloves garlic, minced
  • ½ small onion, chopped
  1. Fill a small skillet or saucepan with 1 cup water and add the carrots. Bring to a boil. Lower the heat and simmer for 5 minutes or until they’re soft enough to pierce with a fork or tip of a knife. Drain the water and set aside.
  2. Heat a wok on high and add the oil. Add sausage and cook for 8 minutes until browned.
  3. Add garlic and onions and sauté until onions become translucent.
  4. Add rice, separate lumps with cooking spoon, and stir fry for 2 minutes or so until it browned a little.
  5. Add carrots and green peas and cook for another minute.
  6. Add soy sauce and mix.
  7. Move everything on one side of the pan, break the eggs and let it fry halfway. Stir and then mix with the rest.
  8. Add green onions and cook for another minute.
  9. Serve immediately.
