Ingredients
  • 1 lb ground pork
  • 1 large carrot, peeled and diced (about 1 cup)
  • 1 large potato, peeled and diced (about 1 cup)
  • 1 medium red bell pepper, seeded and diced (about 1 cup)
  • 1 medium green bell pepper, seeded and diced (about 1 cup)
  • 1 cup water
  • 1 small onion, chopped
  • 1 large clove garlic, minced
  • 2 tbsp soy sauce
  • ½ cup tomato sauce
  • ¼ cup raisins
  • 2 tbsp vegetable oil
  • ΒΌ tsp salt
  • ⅛ tsp ground black pepper
Instructions
  1. Soak cubed potatoes and carrots in 1 cup of water and set aside.
  2. Heat oil in a skillet over medium high heat and saute onions and garlic till fragrant.
  3. Throw in ground pork and saute till no longer pink.
  4. Add soaked potatoes and carrots, discarding water.
  5. Add bell peppers.
  6. Add raisins, tomato sauce, soy sauce, salt and pepper, then mix.
  7. Cover skillet and simmer on medium heat for about 10 minutes, stirring twice till potatoes and carrots are tender, and most of the liquid has evaporated.
  8. Serve immediately.
