Crispy Fried Zucchini Slices

Serves: 4 servings
- 1 large green zucchini
- 1 cup all-purpose flour
- 2 cups Panko bread crumbs
- 1 tsp salt
- ½ tsp ground black pepper
- 3 eggs, beaten
- 2 cups vegetable oil for frying
- 3 tbsp Parmesan cheese
- Wash zucchini and pat dry with a towel
- Cut into ⅓ inch slices.
- Mix flour, salt, and pepper in a Ziploc bag. Coat individual slices in flour mixture. Shake off excess flour.
- Dip floured zucchini slice into beaten egg. Do this for 5 seconds on both sides.fried-zuchinni-with-bread-crumbs
- Coat with Panko bread crumbs and set aside. Repeat steps 1-5 until you have enough batch for frying.
- Heat oil in a frying pan/skillet over medium heat and fry breaded zucchini until golden brown on both sides.
- Transfer to a plate lined with paper towels to absorb excess oil. While still hot, sprinkle with grated Parmesan cheese.
- Serve warm with your favorite dipping sauce (in my case ketchup) and enjoy your crispy fried zucchini slices!
