Easy Hot Dog Fried Rice

Ingredients
  • 8 pieces (1 lb) hot dogs, diced
  • 6 cups day old boiled white rice
  • 1 cup diced carrots
  • 1 cup water (to boil carrots)
  • 1 cup thawed frozen green peas
  • ¼ cup olive oil (or any cooking oil you have)
  • ¼ cup green onions, chopped
  • 2 large eggs
  • 2 tbsp low-sodium soy sauce
  • ½ tsp salt
  • ⅛ tsp ground black pepper
  • 2 large cloves of garlic, minced
  • ½ small onion, chopped
Instructions
  1. Place diced carrots in a small skillet or saucepan and add 1 cup water. Bring to a boil. Lower the heat and simmer for 5 minutes or until they’re soft enough to pierce with a fork or tip of a knife. Drain carrots and set aside.
  2. Heat a skillet or wok on medium high heat. Add the oil and fry diced hot dogs till browned, about 10 minutes.
  3. Saute onions and garlic till fragrant, about 1 minute.
  4. Add the rice, breaking the lumps using the back of the cooking spoon or spatula. Cook until slightly toasted, about 4-5 minutes.
  5. Add the soy sauce and mix.
  6. Throw in the peas and carrots and mix.
  7. Move everything to one side of the skillet and make a space to fry the eggs. Break the eggs and drop onto skillet. Let it fry halfway before stirring. Mix with the rest.
  8. Season with salt and pepper.
  9. Lastly, add the chopped green onions, mix and cook for another minute.
  10. Remove from heat and serve hot.
