Easy Hot Dog Fried RiceThis version of fried rice is a regular in our menu because I don’t worry about dealing with leftovers afterwards.

It’s one of those dishes I make at home where everybody in the family eats including my two kids who are extremely picky eaters.

I admit I don’t like hot dogs too much, but in a fried rice dish, I love them! They complemented really well with the other ingredients and taste-wise it’s a winner in my family.

So if you love fried rice, I encourage you to try this delicious hot dog fried rice recipe. It’s quick and easy to prepare (ready in 30 minutes or less) and a great one-pot meal for the family with carbs, protein, and vegetables all in one serving.

Cooking Time: 25 minutes

Yields: 8-10 servings

8 pieces (1 lb) hot dogs, diced
6 cups day old boiled white rice
1 cup diced carrots
1 cup water (to boil carrots)
1 cup thawed frozen green peas
¼ cup olive oil (or any cooking oil you have)
¼ cup green onions, chopped
2 large eggs
2 tbsp low-sodium soy sauce
½ tsp salt
1/8 tsp ground black pepper
2 large cloves of garlic, minced
½ small onion, chopped

Tools You Need:
Knife
Cutting board
Large skillet or wok
Cooking spoon

Procedure:
1. Place diced carrots in a small skillet or saucepan and add 1 cup water. Bring to a boil. Lower the heat and simmer for 5 minutes or until they’re soft enough to pierce with a fork or tip of a knife. Drain carrots and set aside.Easy Hot Dog Fried Rice 032. Saute onions and garlic till fragrant, about 1 minute. Add the rice, breaking the lumps using the back of the cooking spoon or spatula.
