Maja Blanca (Coconut Pudding)

filipino maja blancaThis Filipino-style pudding is typically made of cornstarch flavored with coconut milk and sugar, with a generous amount of sweet corn kernels, then topped with chopped peanuts or toasted coconut flakes. Maja (pronounced MA-HA) is usually served as dessert during Christmas, birthdays, and other special celebrations.

My version of maja blanca doesn’t include toppings since my kids preferred it like that. But if you want to add it, it’s perfectly fine. Just chop about half a cup of peanuts or toast some coconut flakes and spread on top. Also, I added regular milk for enhanced flavor.

Prep Time: 10 minutes
Cooking Time: 15 minutes

Ingredients:
1 cup cornstarch
2 cups coconut milk
½ cup white sugar
1 can condensed milk (14 oz)
1 cup whole milk
1 can whole kernel sweet corns (15 oz)

Things You’ll Need:
Cooking Pot
Measuring cup
Can opener
Whisk
Ladle
Serving dish

Procedure:
1. Mix all ingredients in a big pot. Dissolve cornstarch thoroughly using a whisk.
2. Turn stove on and bring mixture to a boil.
3. Adjust heat to medium high and simmer. Make sure to stir the mixture constantly to prevent clumping and scorching. Cook for 15 minutes or until it thickens.
4. Use a ladle to transfer immediately into a serving dish.
5. Let it cool at room temperature then refrigerate for at least an hour (I prefer overnight).
6. Cut into squares and serve.
